Text over a busy photo is the most common reason a post is hard to read. Three things fix it: an outline in a dark colour around light text, a soft shadow, or a solid box behind the words. The box is the safest on a photo with both light and dark areas.
Keep the important words away from the very edges. Feeds and stories crop and cover the top and bottom of an image with buttons and captions.
Fewer words at a bigger size read better on a phone than a sentence at a small size.
